Hawaii: Footage from deep in the Pacific Ocean has given the first detailed look at three World War II aircraft carriers that sank in the pivotal Battle of Midway and could help solve mysteries about the days-long barrage that marked a shift in control of the Pacific theatre from Japanese to U.S. Forces.

Remote submersibles operating 3 miles (4.8 kilometres) below the surface conducted extensive archaeological surveys in September of the Akagi and the Kaga, two of the four Imperial Japanese Navy aircraft carriers destroyed during the June 1942 battle, as well as the U.S.S. Yorktown.

The high-quality video includes the official identification of the Akagi, while also providing new clues about the final hours of the aircraft carriers.

The footage shows how the island, or the tall structure that rose above the Yorktown’s wooden deck, was damaged by extremely high heat and how the crew went to great lengths to keep the American ship from sinking.

Julian Hodges, one of the last living veterans who served on the Yorktown, and who swam six hours with a dislocated shoulder to a rescue ship, teared up as he watched.

“Boy, she took a beating,” Hodges said, just weeks shy of his 101st birthday. “I just hated to see my ship torn up like that.”

All three aircraft carriers were found previously, the Yorktown in 1998 and the Japanese ships four years ago. The Akagi was only preliminarily identified, however, and limited images were recorded of the other two.

That changed when Ocean Exploration Trust — founded by Bob Ballard, who led teams that discovered the Yorktown and the Titanic — conducted extensive video surveys of the three ships during a month-long exploration of the Papahanaumokuakea Marine National Monument in the Northwestern Hawaiian Islands, about 1,300 miles (2,092 kilometers) northwest of Honolulu.

“We were able to spend over basically three full days on these sites, including two full days on the seafloor, really methodically and thoroughly documenting the entire wrecks,” Daniel Wagner, the chief scientist for Ocean Exploration Trust, told The Associated Press via videoconference from the exploration vessel Nautilus.

The surveys were streamed online, allowing more than 100 scientists, historians and other experts from across the world to participate in a live forum alongside about two dozen scientists aboard the Nautilus.

The Battle of Midway took place six months after the Japanese attacked Pearl Harbor on December 7, 1941. The Japanese navy aimed to take control of the U.S. Patrol plane base in a surprise attack at Midway Atoll, a tiny group of islands roughly halfway between the U.S. Mainland and Asia. The country also wanted to destroy what was left of the U.S. Pacific Fleet.

But U.S. Forces intercepted communications about the attack and were ready.

The five-day battle was fought about 200 miles (322 kilometres) off the group of islands. Besides sinking the Akagi, the Kaga and two other Japanese aircraft carriers, U.S. Forces shot down more than 250 Japanese airplanes. More than 3,000 Japanese servicemen died.

U.S. Losses included more than 300 servicemen, about 150 airplanes and the Yorktown, which was damaged in the battle and then sunk by a Japanese submarine about 100 miles (161 kilometres) away while being towed for repairs.

Of the 4,600 or so men who served on the Yorktown from 1937 to 1942, it’s believed there are only two still alive, said Michael Leggins, president of the U.S.S. Yorktown CV-5 Club, a group dedicated to providing information about the ship.

One of them, Hodges, is a retired Baptist minister in Johnson City, Tennessee. He joined the Navy the day after Pearl Harbor and worked in the Yorktown’s boiler room during the battle.

He recalled in a videoconference interview with the AP that after two torpedoes exploded, he found himself stuck between two pipes, his left arm so tightly pinned he couldn’t pull it out. His shoulder was also dislocated, an injury that still troubles him 81 years later.

Once freed with the help of a fellow sailor, a life jacket was taped over his injured shoulder and he held on to another to swim more than 3 miles (4.8 kilometres) to a waiting ship. He said the journey took about six hours.

The other surviving Yorktown veteran, Robert Taylor, needed parental permission to join the Navy on September 12, 1941, at the age of 17. Taylor, now 99, manned an anti-aircraft gun during the battle.

Historians knew the crew tried to keep the ship afloat by jettisoning some smaller anti-aircraft guns on the port side. But among the discoveries from the new video was that the sailors also cut away the larger guns, said Hans Van Tilburg, the maritime archaeologist and historian for the National Oceanic and Atmospheric Administration’s Office of National Marine Sanctuaries.

The action “speaks to the dedication of the crew to save their vessel in the last and final moments of that ship’s service,” he said.

When ordered to abandon ship, Taylor jumped overboard and tried to swim to a nearby destroyer, U.S.S. Balch, giving his life jacket to a fellow sailor who didn’t know how to swim.

But as he neared the Balch, the ship started moving off to pick up more men in the water. A crewman on board tossed a line, which Taylor said he grabbed with his foot. He got alongside the destroyer and was pulled aboard but doesn’t remember much afterward.

“They tell me I was screaming,” he told the AP from his home in Auburndale, Florida. The ordeal left him with post-traumatic stress disorder.

The carriers will remain in their current location in U.S. Protected waters, which should prevent them from being looted or becoming tourist destinations like the Titanic.

The only things to be taken from the wrecks, Wagner said, will be the images and video they are sharing.

Hodges said he appreciated that. “Nobody’s going to get anything out of it,” he said.

He hopes the video spurs a new generation to consider the toll of conflict: “Whatever it takes to put wars out of business.”

Taylor quipped that he would like the ship raised, if only to retrieve the USD 28 he left in his locker when the ship went down, about USD 530 in today’s money.

Joking aside, the destruction of the Yorktown haunts him. “I was really upset because I loved that ship,” Taylor said. “It took a lot to sink it.”

In a strange incident, a Bengaluru man got Rs 1 lakh compensation from an Apple India service centre for allegedly damaging his device. The man, identified as Awez Khan, who is a resident of Frazer Town area in Bengaluru owned an iPhone 13.

Awez bought the iPhone 13 October 2021 with one year warranty. However, within a couple of months, he started facing several battery and speaker-related issues, which led him to seek assistance from an Apple service centre in Indiranagar.

Khan was assured by the service centre that the issues would get fixed and he would receive his phone back within one week’s time. He received a call within a few days from the service centre saying that the issues had been fixed and he could come and collect his phone.

After receiving the phone the man again started facing similar issues.

When Awez reported the issue, the service centre asked him to deposit his device for a look. But even after weeks, they didn’t respond to the man.

Eventually, when the user went to receive his phone back from the service centre he was told that an adhesive-like substance was found on the phone while fixing it. Also, the fixing of the phone would not come under the one-year warranty period.

The man in October 2022 sent a legal notice to the service centre to which they didn’t respond. He later filed a complaint in December at the local district consumer disputes redressal commission. After taking cognisance of the matter, the commission recently heard the plea and ordered Apple to pay Rs 79,900 with interest and an additional Rs 20,000 as compensation to Awez.

Indian cinema boasts a rich and storied history, with one of its most treasured facets being its musical heritage. Hindi cinema, in particular, has given birth to timeless classics that continue to captivate global audiences.

The tunes from the ‘50s, ‘60s, and ‘70s serve as time capsules, preserving the enchantment of an era when music transcended being mere background noise; it played a character in the narrative. Composed by legendary figures such as RD Burman, Lata Mangeshkar, and Kishore Kumar, these songs have etched their melodies and lyrics deep into the hearts of millions, embodying emotions, love, and storytelling.

However, in recent times, there is a blind craze for remixes. Music albums now feature remix versions of practically every song, oblivious to the song’s core and vibe. So much so that popular composers and DJs like Amaal Mallik, Tanishk Bagchi, DJ Chetas, and many others have taken up the challenge of rejuvenating these classical songs.

Some people, however, claim the practice takes away the essence of an original song while others feel remixed songs make dull and boring tunes melodious. With remix music gaining traction among the youths, Sunday POST discussed the issue with some experts and here’s what they had to share.

‘Classic songs should be left alone’

Popular singer Abhijeet Mishra, who has several Odia and Hindi albums to his credit, seemed not too excited about the growing trend of remixes. He said, “I don’t support this practice because the original singer and songwriter, of the classics in particular, spend a considerable amount of time creating something exceptional. Therefore, in my opinion, certain melodies or songs should remain untouched and are best left as they are.”

Moreover, there are instances when young singers get misled by the remix songs.

Sharing one such anecdote, he narrated, “This incident happened when I was once a part of pre-Indian Idol auditions in Delhi. After hearing Lata Ji’s immortal song Lag Jaa Gale from a young girl, I casually asked her ‘Do you know who the original singer was?’ ‘Sanam Puri’ the aspirant promptly responded, making me speechless for a while. This was an impact of remix and recreation.”

Puri just recreated the iconic song of Lata Mangeshkar and was not the original singer.

“So, I am always for original songs and creating something from thin air is what I love. And I think classic songs should be left out.”

Some musicians believe that remixing old songs can introduce the younger generation to classic music. But Abhijeet doesn’t agree. “I believe that classic songs have an inherent timeless quality, and attempting to recreate their essence is a challenging task. Even if you use the same artist or recording, you can never truly replicate the original vibe. Some things are simply beautiful when left in their original form. These songs had a dedicated fan-base in the past, they still maintain that following today, and will continue to do so in the future. I don’t believe that remixes necessarily bring the younger generation closer to classical music,” argued the singer.

However, Abhijeet is not totally against the trend of remix as he has grown up listening to a few remix artistes.

“One of them was the Bombay Vikings. Neeraj Shridhar tastefully arranged the classic songs and incorporated some English touches, which I found appealing. This remix still holds a special place as my favourite,” recalled Mishra.

Asked on how to strike a balance between preserving the original essence and giving innovative touch in a remix, he shared, “I believe the key to this lies in your personal musical sensibility. When a composer decides to work on a classic song, he or she should approach it with a great deal of seriousness. Such songs have already earned their status as classics and have been embraced by audiences; they are likely to continue to be appreciated even after undergoing transformations in the future. Therefore, it is the musician’s duty to ensure that the song’s essence is not tampered. A song’s aesthetic must be grasped before making any alterations.”

He further said, “When legends create music for a movie or a standalone track, they incorporate specific rhythms and melodies into the song. It’s important for us to honour their creative process and immerse ourselves in the same mindset they had during composition.”

‘Let’s not distort the cult classics’

The remake of old songs has both positive and negative impacts on the music industry, said eminent music director Prasant Padhi.

“To begin with, I want to emphasise the adverse aspects. When a newly recreated song gains popularity among the audience, it tends to overshadow the original compositions. The artists or composers responsible for the remake often alter the essence of the classic piece, introducing twists or modifying the entire melody, which can dilute the song’s originality and turn it into a mere gimmick,” pointed out Padhi.

Substantiating the view of singer Abhijeet Mishra, the music director continued: “Some songs, such as Hrudayara ei sunyata ku and mu je eka pagala bhanra, have unfortunately lost their essence due to attempts at recreating them with different melodies. With various new singers taking on these songs, the original vocalists have faded from memory, making it difficult for the younger generation to identify the original renditions.”

Padhi believes that the singers of original songs are the ones most impacted by the new reinterpretations.

Elaborating further, he said, “Jitendra Haripal and Krishna Patel’s Rangabati is considered a cult classic. However, with new singers mixing and singing it differently, the original singers have been affected. If we add English phrases, rap elements, and new instruments to the songs, it will surely bring disruption.”

On the positives, Padhi said, “Recreation of songs, particularly those hidden gems that have been lost or little heard, brings about positive outcomes. It ensures that these songs are not forgotten and allows people to enjoy them.”

‘Music’s essence lies in staying true to artistic integrity’

Renowned lyricist and poet Mohit Chakraborty has a different take on the issue.

“In my opinion, the music industry isn’t primarily focused on remaking or remixing old songs. Instead, today’s young generation of musicians and composers are dedicated to creating original compositions rather than rehashing older material. I believe that only a small fraction, around two per cent of old songs undergo remakes, while the majority remains untouched,” according to Chakraborty.

He adds, “Many soulful songs were created in the past which have not been remixed. They are still intact and left untouched. The new composers nowadays are making new songs and not copying or remaking out of old songs. But yes, more Hindi songs are being twisted and recreated these days.”

When asked how he views the remixing of old songs, no matter the language, the winner of several state film awards said, “Some dull songs are given new touches and they now sound good. But at the same time, I don’t like the representation of the classic songs which have their distinct fan following.”

Concluding the conversation, he added, “Aspiring musicians and composers need to recognise that music’s essence lies in creating something extraordinary and distinctive for the audience while staying true to their artistic integrity and not straying from the original context.”

‘Remixes often help increase the shelf life of the original songs’

Ipsita Mohanty, a Pune based singer, said, “Music is to the soul what words are to the mind. I, being an old soul, would love to close my eyes, relax and vibe to a 70s song on a lazy Sunday afternoon. But while I am in the mood enjoying my best and admiring the beauty of the lyrics and music, if a remix song pops up next , my thoughts would be divided and I would land up in a dilemma.”

She adds, “Today’s music industry loves to rehash raging hits and iconic songs from the past. While some attempts have clicked, many have failed to impress music lovers. While the original songs had their own fan base, the remixes were equally popular for their unique beats and freshness and made it to birthday parties and school farewells.

Songs like Kala Chasma, Dum Maro Dum, Humma Humma have surely worked their magic and helped increase the shelf life and recall value of the original songs. These songs were well received by the audience as the composers had added a modern electronic twist to the songs without tampering with the essence of the original compositions.”

She further said, “Legendary singer late Lata Mangeshkar had earlier expressed in a blog, ‘There is nothing objectionable about mixing old songs… it is perfectly alright to present a song in a new way until the actual essence is preserved. But to twist a song out of shape is just wrong.”

“I completely support the idea of remixing a song whilst keeping its originality. Taking away its origin is like taking away its identity. And what’s an entity without an identity?” asked Mohanty.

She signed off by saying, “I have been fortunate enough to have sung many original bhajans and romantic numbers. Having said that, I have also made several cover songs of old beautiful numbers. But I always keep in mind not to tamper with the root emotion. After all, music is all about emotions and emotions need to be kept pure and untouched. Beautifications can be done in the sides. Maintaining the right balance is very important.”

Jerusalem: A team of scientists has decoded how superbolts — Earth’s strongest lightning — occur.

Superbolts make up less than 1 per cent of total lightning, but when they do strike, they pack a powerful punch.

According to the new study published in the Journal of Geophysical Research: Atmospheres, superbolts are more likely to strike the closer a storm cloud’s electrical charging zone is to the land or ocean’s surface.

These conditions are responsible for superbolt “hotspots” above some oceans and tall mountains.

While the average lightning strike contains around 300 million volts, superbolts are 1,000 times stronger and can cause major damage to infrastructure and ships, said the researchers.

The new study provides the first explanation for the formation and distribution of superbolts over land and sea worldwide.

“Superbolts, even though they’re only a very, very tiny percentage of all lightning, they’re a magnificent phenomenon,” said lead author Avichay Efraim, a physicist at the Hebrew University of Jerusalem in Israel.

A 2019 report found that superbolts tend to cluster over the Northeast Atlantic Ocean, the Mediterranean Sea and the Altiplano in Peru and Bolivia, which is one of the tallest plateaus on Earth.

“We wanted to know what makes these powerful superbolts more likely to form in some places as opposed to others,” Efraim said.

To determine what causes superbolts to cluster over certain areas, Efraim and team used lightning data to extract key properties from the storms’ environments, including land and water surface height, charging zone height, cloud top and base temperatures, and aerosol concentrations.

They then looked for correlations between each of these factors and superbolt strength, gleaning insights into what causes stronger lightning — and what doesn’t.

The researchers found that contrary to previous studies, aerosols did not have a significant effect on superbolt strength.

Instead, a smaller distance between the charging zone and land or water surface led to significantly more energised lightning. Storms close to the surface allow higher-energy bolts to form because, generally, a shorter distance means less electrical resistance and therefore a higher current. And a higher current means stronger lightning bolts.

The three regions that experience the most superbolts — the Northeast Atlantic Ocean, the Mediterranean Sea and the Altiplano — all have one thing in common: short gaps between lightning-charging zones and surfaces.

“The correlation we saw was very clear and significant, and it was very thrilling to see that it occurs in the three regions,” Efraim said. “This is a major breakthrough for us.”

Aries: Today, you will show everyone what you’re capable of. You are likely to come up with great ideas and work strategies, which will prove productive. However, if appreciation doesn’t come your way, Ganesha says you must learn to take disappointment in your stride.

Taurus: This day you will be compelled to be resigned to your fate. Ganesha does not see your own willpower in operation today. Though you would be surrendering yourself to the whims of destiny, do not expect anything good to come out of it. You are likely to take wrong decisions and go of course. This is one of those days when you are liable to feel extremely lost and lonely. Have no fears. The day will pass, like any other day.

Cancer: You will make new friends. You will have a jolly time with them, but some worry or tension will nag you. But Ganesha says that all worries will go away by evening, when you relax with friends.

Leo: You will be seized by a desire to do something new for a change today. Your mood will be bright throughout the day. You will be able to achieve success owing to your energy and enthusiasm. The planets are in your favour, hence you can accept the challenges coming your way and prevail over them, says Ganesha.

Scorpio: The day does not begin on a very good note as you seem to be in a belligerent mood. Be calm and patient as your hot temper may spoil a good deal. Limit your conversations and discussions with colleagues and friends, advises Ganesha. Practising meditation and yoga will bring you some respite towards the end of the day.

Sagittarius: No pains, no gains. So, when you go through a lot of turmoil and toil hard for your work, the rewards are definitely going to be fruitful, says Ganesha. Time for get together and soiree with family and friends! In a nutshell, a day with lot of fun activities.

Capricorn: Your hands are full with plenty of projects and assignments. Finish them off as soon as you can and spend rest of the day refreshing your mind. Communicating with people of all walks of life will make you enhance your horizon of knowledge, feels Ganesha. Talking about personal life, you will feel free to conduct yourself as per your wish.

Aquarius: You are in for a challenging day today. But, luck is by your side and you will be able to come out of the storm hale and hearty, assures Ganesha. If you are a businessman, you may enter into some major business venture, sign important contracts, and take up new projects. It will be an exhausting day, but it will keep you charged up.

Pisces: You need to tread cautiously today when it comes to matters related to business. Do not make any decisions in haste, or it could come back to haunt you at a later date. All financial dealings will need to be carefully monitored. Do not indulge in speculative activities or undue risk-taking. New York: Lack of sleep and reduced physical activity during pregnancy may increase the risk of premature birth, according to a study.

The team used a machine learning (ML) algorithm to detect fine-grained changes in sleep and physical activity patterns of 1,000 women whose data was collected by devices worn by them throughout pregnancy.

“We showed that an artificial intelligence algorithm can build a ‘clock’ of physical activity and sleep during pregnancy, and can tell how far along a patient’s pregnancy is, but some patients don’t follow that clock. When patients’ sleep and activity levels don’t change on a typical trajectory, the study showed, it’s a warning sign for premature birth,” said Nima Aghaeepour, Associate Professor of anesthesiology, perioperative and pain medicine and of paediatrics at Stanford School of Medicine.

The study, published in the journal npj Digital Medicine, also identified a variety of risk factors for premature delivery, including greater levels of inflammation in the pregnant woman, specific immune-system changes, higher levels of stress, history of having a preterm birth and certain types of bacteria in the mother’s microbiome.

“Our patient population experiences a lot of adversity, and our preterm birth rates are much higher than at Stanford,” said co-author Sarah England, Professor of obstetrics and gynaecology at Washington University School of Medicine in St. Louis.

“The study participants included women experiencing a variety of stressors linked with higher rates of preterm birth, such as racism, low socioeconomic status and living in areas with higher crime rates,” said England.

Surprisingly, sleeping better and being more physically active than usual for her stage of pregnancy was linked with a 48 per cent reduction in risk for preterm delivery. Conversely, if a woman was sleeping worse and being less physically active than usual for her stage of pregnancy, her risk for preterm delivery was 44 per cent higher than for pregnant women with typical sleep and activity patterns.

“The results suggest that scientists should run studies to test whether tracking and modifying pregnant women’s sleep or physical activity could lower their prematurity risk. It’s telling us where to go for future interventions,” said Aghaeepour.

Aries: Your day is packed full. There are negotiations, commitments, plans and decisions to wade through. You may feel low on energy and swamped due to lack of information and inputs from others. But clarity will return gradually as matters conclude, says Ganesha.

Taurus: Armed with ingenuity and lateral thinking, you are all set to take on today with practised ease, feels Ganesha. The toughest of problems will crumble like a house of cards before your intellect. A promotion or salary hike is also likely today. Money lenders and brokers will have a profitable day, says Ganesha.

Gemini: Today, you will do an amazing job in dividing your time between work and family. Despite your preoccupation with work, you will take time off for your family, and even plan out a small outing, leaving them pleasantly surprised. Also, your dreams are about to come true. Now, how many times does that happen in a lifetime?

Cancer: You will spend your day reflecting on your past and thinking about what went wrong, predicts Ganesha. But keep in mind that your mistakes won’t lead to the end of the world, unless you are a nuclear scientist. So get your act together, and stop brooding over your mistakes.

Leo: On some days, the sun doesn’t seem to have risen from the east, and neither does it seem you have gotten up on the right side of the bed. You start your day in a tensed atmosphere in the morning, caused by some annoyance on the part of one of your family members. But the day is not as bad as it seems. Your mood will change for the better as the day progresses, thanks to your attempt to keep yourself busy. Ganesha actually expects the day’s initial distress to turn into an evening of ecstasy.

Virgo: Razor-sharp and aesthetic to the last cell in your body, entertain and enthrall people with your guile, especially at a social do, says Ganesha. But conserve that zest and save the time to pay due attention to matters of supreme importance, warns Ganesha.

Libra: Monotonous is the word to describe the way things have been till now, but no more, says Ganesha. It might be a very good idea for you to take a break from things around you and go on a small trip. Invigorate yourself with a small picnic with family and friends. It shall go a long way in boosting your energy and enhancing your awareness and wisdom in the coming future. In any case, the stars predict satisfying results to private affairs. Also, you will impress the opposite sex quite easily, thinks Ganesha.

Scorpio: You are in a mood of introspection and analysis, says Ganesha. This is likely to give you a clear vision in the days to come. Your systematic approach towards work will provide you room to think out of the box. Your innovative ideas may bag applause from superiors and bosses.

Sagittarius: Begin your day with a renewed zest. Consider a jump case of lucrative offer. Cracking a telephonic interview may prove to be a milestone in your career path. Your dedication and determination towards your work and goals makes you a deserving employee, says Ganesha.

Capricorn: You will find the day to be taxing, mostly because of the amount of work delegated to you, says Ganesha. But it will take trouble quite an effort to dampen your spirit. You will be in the fray in the latter part of the day, but will leave your rivals trailing behind in terms of business strategies. Success will be yours if you ensure to be mindful of your moves.

Aquarius: You may huff and puff, but today is not the day when you’ll finish what you started. Don’t lose heart, the future is promising. Take a break, says Ganesha, you’ve worked enough. The results are on the way.

Pisces: An important day today, you can expect to reach a much-awaited milestone either on the domestic front or at the workplace, says Ganesha. Expect your professional status and your social standing to receive a boost.

Leicester(England): Every year, around 2.4 million people in the UK get food poisoning – mostly from viral or bacterial contamination. Most people recover within a few days without treatment, but not all are that lucky.

As a microbiologist, I’m probably more acutely aware of the risk of food-borne infections than most. Here are some of the things I look out for.

Eating outdoors

I rarely eat alfresco – whether picnics or barbecues – as the risk of food poisoning goes up when food is taken outdoors.

Keeping your hands clean when handling food is key to not getting sick, but how often do you find hot running water and soap in a park or on a beach? You can use alcohol hand gels (they’re better than nothing), but they don’t kill all germs.

Also, food tends to attract an array of flying and crawling critters, such as flies, wasps and ants, all of which can transfer germs, including E coli, Salmonella and Listeria, to your food.

Keeping perishable food cold and covered is essential as germs can double in numbers if food is allowed to warm up to 30 degrees Celsius for more than a few hours.

For barbecues, meat needs to be thoroughly cooked, and a meat thermometer is a good investment to avoid food poisoning. Do not eat meat if its internal temperature is less than 70 degrees Celsius.

Buffets

Knowing what food-related conditions bacteria prefer to grow in, I am very mindful of the microbiological safety of hot and cold buffet displays.

Indoors, food can be exposed to contamination from insects, dust and above all, people. Food poisoning is, therefore, an inevitable risk when dining at a buffet.

Contamination comes from buffet visitors touching food, and germs can be sprayed on to buffets from people sneezing or coughing close to the food.

Even indoors, one must consider contamination by insects, such as flies or wasps, settling on the uncovered food. Also, germs may be deposited from the air, which is rich in bacteria, fungi and viruses.

I always look at the clock when I’m at a buffet as there is a two-hour catering rule: perishable food will become unsafe to eat within two hours if not kept covered and refrigerated.

The problem is buffets tend to be laid out before you arrive, so it is difficult to tell if the platters of cooked meat, seafood, salads, desserts and appetisingly arranged fruit and vegetables will have been sitting for more than two hours when you come to eat them.

For hot buffets, such as those served at breakfast in hotels, I always avoid lukewarm food, as bacteria that cause food poisoning can grow quickly when food is kept at less than 60 degrees Celsius.

Hot food should be served hot, that is at a temperature of at least 60 degrees Celsius.

If there is any uncertainty about the safety of the food on offer, I reluctantly breakfast on freshly toasted bread and individually packaged marmalade.

Oysters

There are some foods I never eat, and raw shellfish, such as oysters, is one of them. This is because oysters are filter feeders and can concentrate germs, such as Vibrio and norovirus, in their tissue.

A Vibrio-contaminated oyster does not look, smell, or taste different, but can still make you very ill.

The US Centres for Disease Control and Prevention estimates that about 80,000 people get Vibrio infections from raw oysters, and in the US alone 100 people die from vibriosis each year.

It is also possible to pick up food poisoning from eating any raw shellfish (clams, mussels, whelks, cockles). I only eat shellfish that are well-cooked because heat effectively kills harmful germs.

Bagged salads

I never eat bagged salads, largely because one of my research areas is fresh salad safety. It has been found that bagged lettuce can contain food poisoning germs such as E coli, Salmonella and Listeria.

My research group has found that these pathogens grow more than a thousand times better when given juices from salad leaves, even if the salad bag is refrigerated.

Worryingly, the same germs use the salad juices to become more virulent, and so better at causing an infection.

For those salad lovers alarmed by this information, most bagged salads are safe if stored refrigerated, washed well before use (even ready-to-eat salad should be washed) and eaten as soon as possible after buying it.

Cooking practices

In terms of cooking practices, I have a list of dos and don’ts.

For perishable foods, I regularly check use-by dates, but if it is before the expiry date and the food package looks swollen, or when opened the food looks or smells different than expected, I throw it in the bin as it could be contaminated.

I never use the same chopping boards for raw and cooked foods, and washing my hands before and after handling food is instinctual.

One of my “never do” practices is reheating cooked rice. This is because uncooked rice can contain spores of Bacillus cereus, a food-poisoning germ.

Although the Bacillus cells are killed by cooking, the spores survive. If the rice is left to cool and sit at room temperature, the spores grow into bacteria, which will increase in numbers quickly as rice is a good Bacillus culture medium when at room temperature.

The rice-cultured Bacillus can produce toxins that, within a few hours of ingestion, can cause vomiting and diarrhoea lasting up to 24 hours.

Dining out

I find that having a high level of food safety awareness causes me to be first in line for buffets, to be cautious about eating from breakfast bars, and to watch the clock for how often perishable food is replaced.

I never collect “doggy bags” of food leftovers (they have usually exceeded the two-hour time limit), even if they really are intended for a pet.

The benefits of being a microbiologist are that we know how to avoid food poisoning and, in return, people have confidence our cooking is very safe to eat.

New York: Skin behind the ears and between the toes can host a collection of unhealthy microorganisms that can lead to many skin diseases, finds a study.

The microbiome, or the collection of microbes living on and in the human body, play a role in human health, and the skin is no different.

The study by a team at the George Washington University (GW) in the US has shown that the composition of the skin microbiome varies across dry, moist and oily regions of the skin. “My grandmother always instructed the kids in the family to scrub behind the ears, between the toes and in the belly button. So our team decided to test what we call ‘the Grandmother Hypothesis’,” said Keith Crandall, Director of the Computational Biology Institute and Professor of biostatistics and bioinformatics at GW.

“These hotspots are normally washed less often compared to the skin on the arms or legs and thus may harbour different types of bacteria,” Crandall added.

The findings of the study was published in the journal Frontiers in Microbiology. For the study, the team designed an innovative genomics course and then unleashed a team of 129 students who were taught to collect their own data by swabbing certain moist and oily hotspots, behind the ears, between the toes and in the naval as well as from control dry areas like the calves and forearms.

Then they extracted and sequence the DNA in the skin samples in order to compare the microbes living in the hotspots to those in the control regions. The researchers found that forearms and calves which are often cleaned more thoroughly at bath time had a greater diversity and thus potentially a healthier collection of microbes compared to the samples taken in the hotspots.

“When certain trouble-making microbes take over the microbiome they can shift the balance away from health and If the microbiome tips in favour of detrimental microbes, skin diseases like eczema or acne can be the result,” Crandall added.

“The students proved the grandmother hypothesis and their results suggested that cleaning habits can change the microbes living on your skin and consequently its health status,” he added.

Aries: Today is a bright day, and the stars foretell success for you. If you find yourself in a creative mood, indulge in some activity that will satisfy the urge. But, Ganesha says, if you are driving alone, exercise a great deal of caution to be on the safe side.

Taurus: Fortune favours the brave and you will wake up feeling gutsy. Your performance will peak today and you will reap the benefits of the real estate and construction business. Your peers and boss will extend all the support you need. All in all, a day to bask in the glory of advantages and awards.

Gemini: Maintaining the image you have created in the minds of people, as well as upholding your reputation in society will give you some anxious moments today. You will work hard to improve your social standing, and will get results by the end of the day. It is an auspicious and lucky day for you, says Ganesha.

Cancer: Today, you are likely to be brimming with love and compassion. However, certain negative thoughts will spoil all your good work. But don’t fret! Your efforts won’t go wasted and you will get the desired results sooner or later, says Ganesha.

Leo: Do not be surprised if you find yourself today in a situation that somehow feels like a landmark moment in your life. Whether it is a personal matter or something related to work, that you must wait to find out, you will need all your grit and diplomacy to sail through. Stay balanced! One thing assured is that your social reputation shall receive a tremendous boost today!

Virgo: The bulb of ideas will burn bright today. A possible see-saw between your contractual obligation and current duties may baffle you. New contacts will stand you in good stead. Blood will prove thicker, and family and friends will consolidate their place in your life.

Libra: Your instincts are at their peak today. Generally, this means a lot of good, but for you, it may also mean having to put up with the trouble of small things bothering you in a big way. So, it becomes highly important for you to remain balanced and focused. Do so and you may produce wonderful results at work and also look forward to raking in the money from various sources, says Ganesha.

Scorpio: Investing in real estate could yield maximum profits today, says Ganesha. An unusual gain from speculative trade is also on the cards. But you may need to spend time in the waiting room before a more profitable opportunity comes by. You may just reinvent yourself to a happier self and savour every moment of life, predicts Ganesha.

Sagittarius: You are on a high today and a feeling of ecstasy surrounds you. You are performance-driven and shall give your best in anything you take up. Listen to your inner voice, it will guide you to the correct path. Ganesha showers His benevolent blessings on you. Make the most of this day.

Capricorn: You will be overpowered with nostalgia and may long to get in touch with old pals. And as Ganesha says, chances are that you may take a liking to your ex-lover, while simultaneously strengthening your social standing. All in all, the day will be a productive one.

Aquarius: You will be on a spending spree today. But, make sure that your desire to enjoy life doesn’t burn a hole in your pocket. Watch your words and steps, as people are observing your every move. You have put all of your eggs in one basket, so make sure that you don’t mess up and lose everything that you have, advises Ganesha.

Pisces: Some conflicts could crop up in the morning on the domestic front. However, they will cease to be a cause of annoyance as the day progresses. Come evening and you will be in as fine a mood as you ever were, ready to spend time basking in the affection of your near and dear ones, says Ganesha.

Aries: You may have a wide circle of casual friends, but today, these associations will prove to be beneficial. Your friends will help you chase away the blues. That way, you will also understand the deeper role of friendship, says Ganesha.

Taurus: Today, passionate and possessive are the two words that will define your relationship with the people you love, predicts Ganesha. You may choose to take pains for the sake of others, which seems to be highly fulfilling. Your good spirit will sky-rocket by evening. Make sure to change your disadvantage into your advantage, says Ganesha.

Gemini: If you are embroiled in a legal dispute, an out-of-court settlement is likely, predicts Ganesha. You are a courageous person and you’ll need a lot of it today. Don’t back down from your decisions. You may have to be stern with a few people. Your resilience will pay off.

Cancer: Today, you will put your heart and soul into whatever task you take up. But the results may not be too forthcoming. However, that should not be a reason for you to get dejected or anxious. You will get your due sooner or later. Also, spending some time with your loved ones will be quite gratifying emotionally.

Leo: Sometimes, it takes courage to be honest and admit to your failures. Doing so only goes a long way in establishing your credentials as a real person, feels Ganesha. So understand that, while it is only human to make mistakes, it takes more than that to accept them. Also, today is a good day to reconnect with old contacts. Make the effort to do so. It should not be so difficult considering your skills in public relations, says Ganesha.

Virgo: A renewed zest for life will bring in a transformation in you. It is a good time to let people know how important and intelligent – yes, you can be both – are. Your eminence will be obvious as you show how things are meant to be done.

Libra: Good news! You will be a people’s person today. Close friends, relatives and family — you seem to want to spend your time with all of them today, says Ganesha. Better news? Your romantic brilliance will be at its peak today as your fancy takes wings and creativity flows freely in manners that seem irresistible. Best news? The opposite sex just can’t seem to keep their hands off you. Need you want more, asks Ganesha?

Scorpio: A cascade of let-downs will dent your confidence and shake your determination, says Ganesha. But don’t let these failures affect you as they are temporary. At work, your subordinates may force you to take drastic measures.

Sagittarius: A day full of cheer and joy is in store. You will probably enroll in a part-time course and sharpen your skills. But for those in police and legal professions, you will be the lions of the jungle! Roar and stamp your authority, says Ganesha.

Capricorn: You may not get as popular as Romeo did, but your exceedingly romantic nature will earn you quite a reputation, not to forget the hypnotic effect it will have on your sweetheart, says Ganesha. On the flip side, troubles will chase you everywhere; you are likely to face problems with your business rivals and health condition, but your mind will be on guard always, giving you an edge over your opponents.

Aquarius: Today is an important day in the larger scheme of things. You may finally decide to buy a home, change your job, or marry! Sudden and unexpected profits are on the cards too. Reputation and rewards are all yours today. This acknowledgment helps you remain committed, says Ganesha.

Pisces: You are human enough to make mistakes and humble enough to admit them, and it is this honesty that people admire in you. Your affectionate nature will see you excel in attending to the needs of your family members today, says Ganesha.

Palaces, with their grandeur and historical significance, have long been the focal points of tourist attractions around the world. While they serve as reminders of a bygone era, they also hold the potential to be catalysts for sustainable development, particularly in the realms of community crafts and local food production.

Ahead of World Tourism Day, members of a few royal families shared with Sunday POST how the heritage buildings play a significant role in the promotion of tourism as well as giving a boost to local crafts and food that lead to sustainable growth.

KALAHANDI PALACE

Kalahandi Palace
Kalahandi Palace

HH Maharaja Anant Pratap Deo of Kalahandi Palace in Bhawanipatna said, “Since the decision to open our homes, which we consider our palaces, to guests, we have embraced the opportunity to not only provide them with a luxurious experience but also to showcase the unique aspects of our region. Our palaces, first and foremost, embody self-sufficiency and sustainability, reflecting our commitment to these values. Moreover, it has always been our heartfelt mission to preserve and celebrate our heritage in every conceivable manner.”

Food is an important aspect of the hospitality sector that gets the utmost attention at the palace.

“In the realm of gastronomy, our journey towards authenticity begins in our kitchens. Here, we adhere to a strict policy of using only the freshest, locally sourced fruits, vegetables, and grains. Regularly, trusted vendors deliver the bounty of our region to ensure that our guests enjoy the pinnacle of culinary excellence. Our chefs, who have been an integral part of our family for generations, are the custodians of our most cherished and delectable secret recipes, passed down through the ages. Their culinary expertise is the embodiment of our cultural legacy,” added Deo. Narrating the aesthetic part, he mentioned, “When we embarked on the interior design of our palace, we invited local artists to adorn our walls with traditional motifs. These artists, hailing from our Kalahandi region, brought to life the rich tapestry of our cultural heritage, adding an extra layer of authenticity to our palace’s ambiance.”

The Maharaja further quipped, “Kalahandi is renowned for its Chichiguda sarees, a unique and precious creation of this region. To introduce our guests to the artistry of these weavers, we take them to the heart of the handloom village. This not only exposes the weavers’ craftsmanship to a wider audience but also enables our guests to engage in enlightening conversations about the distinctive features of the local products. It is a journey into the soul of our region’s artistic expression.” Not just in food and fabrics, the royals also promote other forms of local crafts in their business.

“In our dedication to local traditions, we have fostered partnerships with local potters. The earthen pots they craft are the vessels of choice for almost all our culinary endeavours, whether it is in our Maa Manikeshwari temple or within the palace itself. This commitment to using traditional cookware not only preserves age-old practices but also adds a unique flavour to our dishes,” Deo says.

The Deos have also taken a few measures to popularise the art and culture of the region.

“One of our proudest cultural assets is the Ghumra dance, a traditional art form that holds a special place in the hearts of culture lovers. Our guests eagerly anticipate the cultural evenings where they can witness this mesmerising performance. Guiding our guests through the vibrant tapestry of our heritage fills us with immense pride, and we recognise that such an endeavour would be impossible without the unwavering support and cooperation of our community. Together, we celebrate and share the essence of our region, ensuring that our guests leave with cherished memories of an authentic and enriching experience,” concludes the Maharaja.

BELGADIA PALACE

Princesses Mrinalika and Akshita BhanjDeo, the directors of the Belgadia Palace at Baripada in Mayurbhanj district, sharing their views on how local food and crafts are nurtured for sustainable tourism, said, “Preservation and raising awareness about the native plant life, along with the practice of edible landscaping, are central to our mission. We are dedicated to restoring and nurturing indigenous and select exotic plant species while eliminating invasive species that pose a threat to century-old plants. Our property boasts an array of botanical treasures, including the Golden Asafoetida, Clove Plants, a century-old bamboo plantation, as well as a diverse collection of mangoes, such as the Alphonso variety, along with other fruit-bearing trees like Sitaphal, Ramphal, Lychee, Papayas, and Bananas.”

Akshita carried on: “In our commitment to environmental sustainability, we prioritise waste segregation and composting, utilise Energy Star appliances for heating and cooling, and operate a towel/linen reuse programme that significantly reduces water consumption by over 40%. Furthermore, our property is illuminated with energy-efficient LED lighting, equipped with low-flush toilets, and follows green laundry practices, promoting sustainable sanitation and water management. We also employ sustainable building materials, recycling waste materials like tree and foliage debris from Cyclone Fani into compost and repurposing fallen branches to craft tables, chairs, and boundary walls, minimising waste generation.” Listing a few more measures, she said, “Within our guest rooms, we provide refillable haircare and skincare dispensers, exclusively use glass bottles, ceramic mugs, and refillable refreshment containers throughout the palace grounds, and have banned single-use plastic items.”

The BhanjaDeos have also embraced nutrition farming and implemented integrated pest and nutrition management techniques through organic practices, including Amrut Jal and other ZBNF farming methods.

“We operate three composting sites and employ sustainable waste management practices. Our commitment to eco-friendliness extends to the use of sabai grass and environmentally friendly materials in the house, serving as dustbins, bags, and even doormats,” claim the royals.

This encompasses supporting sustainable crafts such as dokra and black stone carving and promoting folk arts like Pattachitra in decorative elements around the palace. “We prioritise recycled and upcycled furniture and interiors, and we actively engage and train local youth to ensure that the economic benefits of tourism benefit the local community directly,” says Mrinalika.

“We employ natural cleaners, disinfectants, and insect repellent sprays to maintain a clean and healthy environment. At our core, we collaborate with local communities, including Project Chhauni, Sabai Grass Communities (SHG), the Leper Colony, and Dokra Handicraft Villages, to promote business opportunities and provide alternative livelihoods through eco-tourism. By facilitating direct market access for these communities without intermediaries, we ensure that 100% of the profits return to them, contributing to their sustainable development,” they conclude.

JHARGRAM PALACE

Jharagram Palace
Jharagram Palace

Jhargram Palace, still inhabited by West Bengal’s Malla Deb royal family, stands as an architectural fusion of European and Islamic styles. The descendants of the Rajput clan from Rajasthan, who are credited with blending heritage with hospitality, have governed Jhargram since the 15th century. The palace’s ground floor has been transformed into a heritage accommodation recognised by the Ministry of Tourism, Government of India.

Sharing the objective Vikramaditya Malla Deb, the prince of the Jhargram Raj Palace, says, “Our vision revolves around revitalising our architectural heritage and connecting it with sustainable tourism. It entails the restoration and reimagining of palaces and bungalows, promoting a travel experience independent of star-rated accommodations. Our primary goal is to create employment opportunities for Jhargram’s skilled craftsmen and artisans within the tourism sector. We collaborate with various artisans and performers, including folk dancers who specialise in Raibeshe, Jhumur, Tusu, Ranpa, Dangery, and Bhuang dancers, singers skilled in Vaishnav kirtan and Jhumur songs, and artisans proficient in crafting Sal leaf plates, Sabai rope products, bamboo baskets, stonecraft, and pottery.”

The promoters have also partnered with traditional black stone craftsmen and local village women skilled in crafting sal and sabai products.

“We assist them in selling their creations to our guests through our on-site sales point in the palace, and we provide them with a platform to exhibit their items during the winter tourist carnivals held in December. Our culinary approach prioritises locallysourced, farm-to-table offerings, aligning with the locavore concept,” shares Malla Deb.

He claims that they have collaborations with organic vegetable growers, poultry raisers, black Bengal goat breeders, fisheries, and licensed poppy seed farmers, as our menu celebrates the native flavours of the Jungle Mahals region.

“We rolled out services which are curated experience-oriented local tours around art, architecture, culture, local life, food, and nature. Advocating local social responsibility for restoration of historic sites, as well as organic farming and local tree planting,” he further says.

The Yuvraaj ends with a message on sustainable tourism by adding, “As we celebrate World Tourism Day, we focus on borrowing from the ‘Gandhian idea’ of sourcing locally. As people these days are in search of the authentic rural experience we ensure that farm to table and locally sourced products are sold and served at every dining occasion.”

Tourism sector in Odisha is expected to receive the much needed boost with the state government announcing hosting of the annual flagship camping event ‘Eco Retreat’, at seven locations from December 1, said sources.

The fifth edition of ‘Eco Retreat’ will be organised at Konark, Putsil, Sonapur, Daringbadi, Bhitarkanika, Satkosia and Hirakud. Unparalleled glamping experience with luxury, adventure, local culture, mouth-watering Odia cuisine, aesthetic folk music and dance will be on the platter.

According to educationalist and Odisha tourism enthusiast Jitu Mishra, “Odisha Tourism in recent years has come up with a range of innovative ideas showcasing Odisha’s hidden tourism potential. Eco Retreat at several destinations is one such innovative ideas that is gradually changing the perception of tourists about Odisha from beyond the borders. Odisha Walks in the Capital city of Bhubaneswar is yet another such innovative idea that even found place in Time magazine.”

Mishra also suggested that both the government, and travel enthusiasts & professionals should work in collaboration to bring hidden gems to limelight and create homestays or other modes of accommodation for travelers.

They can also create more local resource persons who can provide more authentic curated experience to travelers, he added. Srinivas Subudhi, working president of Hotel & Restaurant Association of Odisha (HRAO), said “Attracting more and more foreign tourists is the need of the hour. Although the launch of direct flights connecting Bhubaneswar with Dubai, Bangkok and Singapore will help in attracting more tourists from abroad, infrastructure development like more number of good hotels in the state is highly required. Also, we need good skilled workforce and a good brand ambassador who has the charisma to attract people towards the state like Amitabh does for Gujarat. Further, hospitality sector needs as much importance as the MSME sector does and this will help in economic development.”

As per statistics compiled by the Tourism department, there has been an 875 per cent growth in inflow of foreign and 110 per cent growth in domestic tourists to Odisha in 2022 as compared to 2021. The Tourism department attributed the reasons for the growth to multiple factors. Tourism director Sachin Ramchandra Jadhav said that the state government has prepared a robust roadmap to revive the tourism industry post-Covid. “People wanted to travel after remaining indoors owing to Covid-induced restrictions. There were restrictions on flight movements. The Odisha government made a vibrant marketing and branding initiative to woo the tourists. We launched ‘Odisha by road’ campaign to explore the state by road,” Jadhav said.

With recent launch of direct flights connecting Bhubaneswar to Dubai, Bangkok and Singapore under the ‘Viability Gap Funding’ scheme, the Odisha government is hopeful of doubling its foreign tourist footfall by 2025 as compared to the pre-pandemic levels, Jadhav said. “The target is to double the foreign tourist arrivals by 2025 to 2.5 lakh from the pre-Covid peak of 1.2 lakh witnessed in 2019,” he added. OTDC chairman Lenin Mohanty said the Eco Retreat event has become the face of Odisha Tourism that promotes sustainable tourism in the state.
